Asian Chopped Salad

Ingredients

For the Salad:
·1 cup peeled and sliced broccoli stems
·2 cups sugar snap peas, trimmed and sliced diagonally
·2/3 cup sliced radishes
·1 cup chopped red cabbage
·1/3 cup slivered almonds
·2 cups cooked shredded chicken,optional
For the Dressing:
·1 tablespoon white wine vinegar
·1 tablespoon granulated sweetener
·1 teaspoon. soy sauce
·1/2 teaspoon minced garlic
·1/4 teaspoon sesame oil
·1/4 teaspoon ground ginger
·1/4 teaspoon Sriracha sauce, or more
·1/3 cup light mayo

Directions

Toss sliced broccoli stems, sugar snap peas, radishes, and red cabbage together in a medium-sized bowl. In a small bowl or jar, mix together the white wine vinegar, sugar, soy sauce, garlic, sesame oil, ground ginger, and Sriracha sauce. Whisk in mayo. Place almonds in a dry pan and toast over high heat for 1-2 minutes, just until they become fragrant. Add dressing to salad ingredients and toss until all the vegetables are well-coated with dressing. Add toasted almonds and toss again. Serve and enjoy!
