Broccoli with Peanut Sauce

Ingredients

1 head of broccoli chopped into florets and stem peeled and sliced and cooked
(can be boiled or stir fried or even raw)
Green onion, sliced
Toasted sesame seeds
Sauce:
¼ cup peanut butter (no sugar or salt added)
2 tsp tamari or soy
1 tbsp sugar
1 Tbsp lemon juice, lime juice or white vinegar
1/4 cup coconut milk (or substitute water)
1/4 cup water
chilli to taste
1 clove crushed garlic
1 tsp finely grated ginger

Directions

Whisk all of the sauce ingredients together in a pot and then bring sauce to a simmer. Pour sauce over the cooked broccoli and then top with the spring onion and sesame seeds. To make this into a light meal for 4, double the sauce quantity and serve over soba noodles or rice with tofu or chicken.
