Easy Apple Sour Cream Cake

Ingredients

½ cup vegetable oil
1 cup white sugar
1 large egg
½ cup sour cream (or substitute yogurt)
1-½ cups flour
1 tsp cinnamon
½ tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp vanilla
2 apples, sliced or chopped

Directions

Whisk oil and sugar together until creamy. Add egg then the sour cream and vanilla, whisking well. In a separate bowl sift together the flour, cinnamon, baking soda, baking powder and salt. Stir the dry ingredients and the apple slices into the egg mixture and mix until just combined. Pour into a lined or greased tin and bake in a 180C oven for about 35-45 min or until a knife inserted in middle comes out clean.
