Mexican Salad

Ingredients

Mexican spice mix

40g paprika
40g cumin
40g oregano
2 teaspoons salt
1 tablespoon garlic powder
1 teaspoon chili powder (optional, more if desired)

Salad

2-4 cups torn lettuce leaves
1-2 tomatoes, chopped
1 avocado, peeled & diced
half cucumber or capsicum, diced
250g mince (or 400g cooked cannellini beans for meatless meal)
Cooked brown rice

Directions

To make spice mix, place all ingredients in clean glass jar with lid and shake to mix. Heat frypan to medium, add mince with 2 heaped tablespoons of the spice mix. Break up mince and cook until done. If using beans, place beans in small saucepan on medium heat with ¼ cup water and 2 tablespoons spice mix , heat through. Arrange salad ingredients on plate. Place rice alongside and top with mince or beans. Garnish with sour cream or Greek yogurt and salsa if desired. Serves 2.
