Fuji Apple and Walnut Salad

Ingredients

For the Salad:
·10 cups torn romaine or
leafy green of choice
·2 Fuji apples, chopped
·1 cup crumbled Gorgonzola cheese
·1/2 cup chopped walnuts, toasted
·1/3 cup red onion, thinly sliced
·1/3 cup dried cranberries or raisins

For the Cider Vinaigrette:
·3/4 cup fresh apple juice
·3 tablespoons apple cider vinegar
·2 teaspoons honey
·1/4 teaspoon salt
·1/4 teaspoon black pepper
·1/4 cup walnut oil or olive oil

Directions

In a salad bowl, toss all salad ingredients. In a small bowl, whisk the cider, vinegar, honey, salt and pepper. Gradually whisk in the oil. Drizzle over salad, then toss to coat. Serve and enjoy!
